Not feeding a crowd this Thanksgiving? Roast a turkey breast

Half-way through the brine time, rotate the turkey in the brine neck up. And that’s why so many people have dry turkey breast meat on Thanksgiving. Brining will give the turkey a deeper flavor and more tender taste, and the process will assist with defrosting.

Until next time, Kalaka reminds you that domesticated tofurkies can’t fly. Many people think that is why gravy was invented. That number has been decreasing since 2008, when 273 million turkeys were produced. To be honest, the prep work is what takes up an abundance of time when it comes to cooking.

“I prefer to let the butcher break down the turkey for me”, chef David Codney said. Both produce a great bird, but chefs will go to the mat for their team. When you’re ready to roast the turkey, submerge the turkey in fresh, cold water to remove excess salt. Oven bags help keep the juices recirculating so the meat is moist. Always use a meat thermometer to ensure the turkey isn’t under- or over-cooked. You do not want to steam the turkey.

That’s one of my favorite things about Thanksgiving: the sharing or passing down of these traditions from generation to generation.

Low and slow. I get it. You just might want to check with a cookbook before going with that exact temperature.

The main component in a brine is salt. “I do half of the water weight in ice, and the other half I use to boil with the sugar, salt and spices”. This makes cleanup a whole lot easier. Fresh is my preference. Feel free to add any other seasonings. Add mushrooms and season with salt and pepper. “Then you chuck it on into the oven and it will be nice and brown and evenly crisp and handsome for you”.

A heavy duty roasting pan is a worthwhile investment, but only if you make gravy from the drippings (the pan can be set on the stovetop after roasting) and if you roast other critters during the rest of the year. Let the turkey brine overnight in the refrigerator for at least eight hours.

Shepherd replaces the traditional sugar in his wet brine with honey and also uses citrus, giving the savory turkey a floral aroma.

The amount of sodium in a 4-ounce serving of turkey can vary greatly, depending on whether you choose a fresh bird or a frozen one.

Tesky says to start roasting the turkey in a 400 to 425 degree oven for the first 30 minutes. Stuff the cavity of the bird with onion, celery, thyme, rosemary, lemon and lemon juice. And the idea is you cut out the backbone of the bird and then you kind of splay its legs out in this kind of pornographic way and press down on the breasts so that the whole turkey lies flat with all of its skin on top. This year I may be frying it instead of roasting it in the oven, but I enjoy the tradition all the same. Dairy products dropped 2.3 percent. Cover with plastic wrap and refrigerate overnight.

Turpentine passed away in January due to a heart attack, a common problem for domestic turkeys who were bred to grow fat and eventually be eaten.

Preheat the oven to 375 degrees F. Line the bottom and two sides of an 8-by-8-inch baking pan with parchment paper. Melt butter and then sprinkle on the flour. Cook for a few minutes, stirring constantly. Turn the heat up a bit and carefully add the remaining 1 ½ cups of dry white wine and ½ cup of chicken stock. Stir in parsley. Taste again for seasoning.
