Revellers had gathered to sunbathe by the Serpentine lake and to take part in a water fight.
Officers in riot gear carrying plastic shields were drafted in to deal with the situation after one police van appeared to have been forced to speed out of the park.
The officer was rushed to hospital after he suffered a head injury.
“One male police officer suffered a head injury and has been taken to a central London hospital for treatment”.
A spokesman for the Metropolitan Police said officers arrived at the park at around 3pm this afternoon after a “large” number of people arrived for a spontaneous water fight.
Three people were stabbed including one police officer when the spontaneous event disrupted into chaos.
Scotland Yard said the crowds had been dispersed by 2.20am on Wednesday morning.
