Police were called to the Tea Gardens Hotel in Bondi Junction following reports of a brawl.
The 30-year-old man has been charged with recklessly causing grievous bodily harm, and was refused bail when appearing in court via video link.
It is believed Cierans fell to the ground and suffered a serious head injury.
