The Golden Arches said Wednesday it started to test Chicken McNuggets with no artificial preservatives in 140 stores in OR and southwest Washington in March.

While McDonald’s did not give full details about what is or isn’t in the test recipe, it said the new McNuggets do not have sodium phosphates, widely used food additives that the company has said can keep chicken moist.

Fast food giant McDonald’s is testing a preservative-free chicken nugget recipe in an attempt to portray healthier food options and boost its faltering business.

A man who answered the phone at a Portland-area McDonald’s confirmed the store was selling the preservative-free nuggets.

The cleaner-label McNuggets come as McDonald’s combats the perception that its food is overly processed and laden with preservatives.

The McNugget test reflects the sensitivities of parents of young children in particular.

The McNugget test was first reported by Crain’s. The new recipe contains ingredients McDonald’s says are more recognizable to consumers, such as lemon juice solids and rice starch. McDonald’s has long marketed to families with its Happy Meals and Ronald McDonald mascot.

McDonald’s have vowed to make changes to their Chicken McNuggets that will remove some of the mysterious substances that have made them tasty but very, very dodgy in terms of ingredients since the 1980s. “More than ever, customers care about where their food comes from and how it is prepared”.
